The Saazy Blonde we brewed this past weekend is bubbling away really nicely. At first, when I placed her under the stairs, I saw no activity fo about 36 hours. I think the ambient temp is around 60°F, which is the bottom end of the recommended temp range for the Notty yeast. Moved the carboy into my bathroom, where there is an air vent (house is set at 67 during the day) and had a nice skim of foam within three hours. Probably kicked it up just enough and the warmer temps started fermentation.
Will pull a sample tonight and check gravity. We might actually be bottling this sometime this weekend!
